Serve the crème fraîche separately.

Preheat the oven to 225°C. Line a baking tray with baking paper.

Wash and halve the potatoes lengthwise. Place them on the tray and season with oil, salt, black pepper, and dried thyme. Roast in the oven for about 35 minutes, or until the potatoes are tender.

Peel and finely chop the onion and garlic cloves. Rinse and slice the pointed peppers into strips.

Finely chop the chives. Rinse the rocket in a sieve under cold water and leave to drain.

Heat oil in a frying pan. Add the minced meat and fry, stirring, for about 3–4 minutes.

Add the onion and peppers to the pan. Continue frying for a few minutes. Season with salt, black pepper, paprika powder, dried herb mix, (Dijon) mustard, and white wine vinegar.

Stir in the crème fraîche and chives. Heat through quickly and remove from the hob.

Serve the roasted potatoes with the minced meat filling and rocket.
