Crispy Tofukatsu, or Japanese Breaded Tofu Steak & Rice

Tofukatsu, or Japanese Breaded Tofu Steak & Rice, is a delicious, completely vegan meal combining a crispy coating, soft tofu and fresh Asian flavours. The tofu steaks coated in panko breadcrumbs fry to a beautiful golden brown in the pan, accompanied by a sesame-finished cabbage salad and steaming jasmine rice. This easy-to-assemble dish is ideal for a busy weeknight, yet looks tempting on the weekend dinner table too.

What makes Tofukatsu especially delicious?

The secret to tofukatsu is the delicious contrast of textures: the crispy panko coating is paired with tender tofu and a thin, crunchy cabbage salad. A sauce made from BBQ sauce, ketchup, soy sauce and sugar brings sweet, salty and rich flavours to the dish. Sesame oil and sesame seeds finish everything with an Asian aroma. Tofu provides plant-based protein, and the meal is dairy-free, lactose-free and vegan.

How to succeed and adapt the recipe easily

Dry the tofu carefully with kitchen paper before seasoning so that the panko breadcrumbs stick better and the coating becomes crispier. Cut the tofu steaks as evenly as possible and fry them patiently for about 4–5 minutes on each side. Do not turn the steaks too early, so the coating has time to brown. You can use sesame oil instead of regular oil for frying, or add spring onions and chilli to the cabbage salad. For a gluten-free version, use gluten-free panko breadcrumbs and soy sauce.

Serving Tofukatsu at its best

Arrange the rice, tofukatsu and cabbage salad in separate sections in a bowl, or serve the tofu steaks on a bed of rice on a plate. Drizzle over the flavourful sauce just before serving so the crispy coating stays as good as possible. Garnish the portions with sesame seeds and serve with a fresh cucumber salad, edamame beans or lime wedges. Chilled lemon and ginger tea makes an excellent accompaniment.
