Eggplant recipes
Eggplant recipes bring a juicy, savoury touch to weeknight dinners – our chefs pick the ingredients, delivered to your door.
Eggplant tastes best when it's cooked through: raw it's tough, but roasted until soft it turns mild and creamy. Cubed eggplant tossed in oil roasts in a 200 °C oven in 20–25 minutes.
Popular eggplant dishes include eggplant pasta in tomato sauce, oven-roasted eggplant with a cheese topping, and moussaka. Eggplant soaks up a lot of oil, so add it a little at a time or use a baking tray instead of a pan.
Eggplants sold today rarely need salting to remove bitterness, but salting for 15 minutes firms up the texture of a large, mature eggplant. You can swap eggplant for zucchini, which cooks faster and has a mild flavour.
Eggplant is done when it gives slightly when pressed and the surface has taken on colour. At the shop, choose a firm, glossy and heavy eggplant; soft spots on the skin mean it has been in storage too long.
In Ruokaboksi's eggplant recipes the vegetables and spices come pre-measured, so it's easy to try a less familiar vegetable without half of it going unused.
