Noodles are among the quickest sources of carbohydrates: thin wheat and egg noodles cook in 3–5 minutes, rice noodles often just by soaking in hot water, and glass noodles in about 5 minutes. That's why a noodle dish easily comes together in under half an hour.
The most popular noodle recipes are chicken stir-fry, minced meat noodles, vegetable noodles and clear-broth noodle soups. The key to success is the order: cook the noodles slightly al dente, then drain and rinse them in cold water so they stop cooking. Next, fry the protein and vegetables over high heat in a large pan or wok, and toss in the noodles with the sauce only at the very end.
A reliable basic sauce for four servings is 3 tbsp soy sauce, 1 tbsp sesame oil, 1 tbsp rice wine vinegar or lime juice and 1 tsp honey; hoisin or chilli paste adds sweetness and kick. Allow about 75–100 g of dried noodles per person and plenty of vegetables, as they shrink when fried.
For a gluten-free version, choose rice noodles and tamari instead of soy sauce. In Ruokaboksi's recipes the noodle dishes come with their seasonings ready and in the right amounts, so stir-frying works even on a busy evening.
